It's Watermelon season and we can't wait to sink our teeth into a sweet slice of watermelon on the 4th of July. While most of us will agree that Watermelon is a most delicious fruit, here are a few things that you may not know:

Watermelon is over 92% water, and early explorers used watermelons as a canteen.

Every part of a watermelon is edible, even the seeds and rinds. Contrary to popular belief, eating watermelon seeds will not cause a watermelon to grow in your stomach.

While most Americans associate watermelon with the 4th of July, it is actually consumed much more heavily in other countries making it a truly international fruit.

Did you know that vinegar's shelf life is indefinite? That means that as long as you're around, you can use vinegar to clean your home. It's also safe for your family and the environment because it's a natural organic bi-product of fruits, vegetables and grains.

Use Vinegar to...

Disinfect the inside of your dishwasher pour 1/2 cup into the reservoir and run an empty cycle.

Clean your floors add 1/4 cup to a bucket of warm water to clean any type of floor except marble or wood.
It's the age old debate: is a tomato a vegetable or a fruit? Botanically speaking, a tomato has seeds which make it a fruit, just as other foods we think of as veggies are fruits too, including avocados and cucumbers.

Tomatoes are just as nutritious as they are delicious. With over 7500 varieties, they contain a powerful antioxidant called Lycopene and help with Vitamin C intake. Tomatoes are in peak season in August so check out your local market or grocery store for the perfect snack, salad, or sandwich topper. Our favorite is the Heirloom variety.

Trivia: The first time tomato juice was served was in 1917 when a chef in Indiana ran out of oranges to make his morning OJ and he used tomatoes instead. It was an instant hit!

Samantha has attended several of our camps this summer and has cooked everything from rainbow cupcakes to chocolate pizza. We love having Samantha in our camps because she is always enthusiastic and eager to cook and try new recipes. She is also a great helper with kitchen clean-up. Samantha has thoroughly enjoyed camp this summer; not only has she learned various new recipes, but she has also made many new friends with her Taste Buddies.

Samantha has enjoyed cooking at home and at the Taste Buds kitchen very much. She has even been inspired to create her own recipes. One of the things she has learned at Taste Buds is that if something does not sound good, it will be good.
A Summer Favorite: The Strawberry

As summer heats up we begin to remember one of our most favorite summer snacks, the strawberry! There are a couple of theories as to why a strawberry is called a strawberry. Some say it resulted from children in the 19th century selling berries they had placed on straws and calling them "Straws of Berries". Another belief is that the name derives from the fact that the berries are "strewn" among a given plant and over time "strewn" has morphed into "straw". Regardless of the origin of the name, strawberries are a favorite summer treat among many and are used in refreshing drinks, delicious deserts and even savory main courses.

California is a major producer of strawberries, yielding around 75% of the nation's strawberry crop. In fact, if you laid all of the strawberries produced in California in one year end to end, they'd wrap around the world 15 times. Strawberries are also the only fruit with their seeds on the outside. This week at our "Taste of Summer" camp, we used fresh strawberries in a jam that was a huge hit among the kids. We paired ours with homemade scones, but the jam would go perfectly on anything from ordinary toast to the filling of a layer cake...

Strawberry Jam

Ingredients
3 C hulled strawberries
(1/4) C sugar
1 T fresh lemon juice

Directions
1. Cut strawberries with plastic knives and then puree in food processor until coarsely chopped.
2. Add in sugar and lemon juice and transfer to the stove to thicken.
3. Cook over medium-high, stirring frequently until jam is thick and bubbling, about 10 minutes.

Happy Summer!

A Snow Cone is a made up of a combination of shaved ice, flavored with various syrups. Some popular flavors include cherry, lemon, and watermelon. Snow cones are crushed either by hand or by specialized ice-crushing machines.

The Snow Cone was first seen in the Texas State Fair in 1919. Nearly two decades later, Ernest Hansen of New Orleans, Louisiana invented the first known “ice block shaver”. He was inspired by Italian ices, but wanted to make a refreshing treat that was more sanitary and slightly more sophisticated. His wife began to create fresh syrups, and the “Snow Ball” was further developed. Over time, the name “Snow Ball” has evolved into “Snow Cone” and is enjoyed by many worldwide. Popular places to find Snow Cones include carnivals, fairs, and stadiums.

What are Snow Cones called in other locations?
In Puerto Rico they are known as Piraguas, in Mexico they're called Raspados, and in Hawaii they are referred to as Shaved Ice.

Our First Tomato

Our herb garden has been growing a little bit every day and we are proud to say that we now have our first tomato! There has been much debate over the past years with regard to the identity of the tomato. In fact, it took a ruling by the Supreme Court in 1893 to declare the tomato as a vegetable. However, it actually belongs to the fruit category because it is grows from the ovary of the plant after fertilization. In addition, tomatoes contain seeds which is a characteristic of fruit.

Tomatoes are a favorite among many and are grown in all 50 states! They can be prepared stuffed, baked, boiled, stewed, pickled, and fried. They are the base for many sauces. The French used to refer to the tomato as the “apple of love.” We can't wait to use our freshly grown tomatoes in future dishes!

Green Kids!

Most kids think that their fruits and veggies came from the supermarket, and don't even realize that their morning O.J. started life on a tree. It's time for the little ones in NYC to reconnect with their food sources. A few suggestions are:

1) Take your kids to a local farmers market in your area and let them try the delicious samples and talk to the farmers about what they do for a living.

2) Visit a green space such as the Botanical Gardens. For example, the New York Botanical Garden's educational Family Gardens.

3) Plant at home--an herb window box is a great beginners garden for your kids. Or even planting some vegetables in containers on your rood deck or in your courtyard. Your child can help every day with the watering and weeding to learn about the essential maintenance and care a garden needs.

4) Try composting at home--this may be tough in an apartment, but it's a wonderful way to teach your kids how you can use nature's own recycling system.

5) Reach out to your community to start a garden at your child's school! These gardens are popping up all over the city. They are a perfect way to help children understand how their food got to their plate.

Taste Buds is an urban environmentally friendly learning experience too! Join us to help with our indoor herb and veggie garden complete with 16 different herbs, an heirloom tomato, a variety of lettuce, daffodil and pansy. We can't wait to make delicious recipes with our Spring and Summer harvest! Yum!

The Easter Egg

The "Incredible Edible Egg" can be eaten alone--fried, poached, scrambled, etc.--or used as an ingredient in a complex recipe. In egg cookery the funtional role of the egg is for color and flavoring, thickening power, as an emulsifying agent, and for structure and texture. The components of an egg include the yolk, the white or albumin, the chalazae, the air cell, the outer & inner membranes, and the shell. Each egg has approximately 6 grams of protein. Did you know that the only difference between a white or brown egg is the chicken that they came from?

During Easter the egg is used in many ways as a symbol of new life. One instance is in the Egg Hunt, a game during which decorated and dyed eggs are made and hidden for children to find. Another way is in food. One exceptional traditional Easter dish is Quiche Lorraine. At Taste Buds we have a special recipe that we like to make every year...

Quiche Lorraine

Ingredients:
1 9-inch prepared pie crust
6 oz. spinach
2 large eggs
2 large egg yolks
1 1/4 cup half & half
1/4 teaspoon salt
1/4 teaspoon ground pepper
pinch freshly ground nutmeg
1 cup grated Gruyere or Swiss cheese

Directions:
1. Preheat oven to 375(deg)
2. In a large bowl beat the eggs, yolks, and half & half
3. Add the remaining ingredients and whisk to combine
4. Pour into the prepared crust and bake until the custard is golden, puffed, and set yet still slightly wiggly in the center, 30-35 minutes
5. Remove from oven and let cool on a wire rack for 15 minutes before serving

Have a Happy Easter!

Why Are These Brownies Different From All Other Brownies?

On Passover, the Torah instructs Jews not to eat (or even posess) "chometz" all seven days of Passover. "Chometz" is defined as any five grains (wheat, rye, spelt, oats, and barley) that have come into contact with water for more than 18 minutes. Only unleavened bread, "matzoh", may be eaten at this time. The reason leavened bread is prohibited is in honor of the Hebrews in bondage in Egypt, as well as the haste in which they left. They did not have time to wait for the bread to rise. Today Jews celebrate Passover in commemoration of their liberation from slavery in Egypt.

It's seder time! A special family meal on the first night. Try one of our favorite Passover recipes this year and impress your seder guests. If they love fudgy brownies, you are in luck. No one will ever know these are for passover and your kids will love em!

Unbelievable Brownies

Ingredients:
4 large eggs
2 cups sugar
1 cup vegetable oil
1/2 teaspoon fine sea salt
3/4 cup Dutch process cocoa powder
1 cup potato starch
1/2 cup semi-sweet chocolate chips

Steps:
1. Preheat oven to 350(deg)
2. With an electric mixer, beat eggs and sugar until smooth
3. Mix in the oil and salt and sprinkle in the cocoa powder and mix to make the batter chocolaty
4. Add the potato starch and mix to combine
5. Stir in the chocolate chips
6. Grease a 11x7 inch brownie pan and pour batter into pan. Bake for 35-40 minutes. Allow to cool before serving. Makes 18 brownies.

P.S. Don't forget to lick the bowl!

A Taste of India

Spring has sprung! And this weekend we were out and about. We had the pleasure of eating at the Hampton Chutney Co. Have you ever had a dosa? It's a type of South Indian pancake, made from fermented lentils and rice blended with water; typically served with chutney or sambar. At Hampton Chutney Co. the concept is more like Indian fusion food so flavors are not as intense or too spicy for your kids. Besides traditional potato masala, innovative fillings such as arugula, spinach, cheddar & goat cheese, sun-dried tomatoes, or portabella mushrooms are piled into a thin crispy crepe the size of your arm! The chutney is delicious and there are so many varieties. We prefer the mango and cilantro.

The newest store is located on the Upper West Side in Manhattan, and it caters to neighborhood families. With a kiddie corner full of books and toys for tots to play with while they eat. Plus a menu selection of children's favorites. This place is a real gem! The ingredients are so fresh. The dosa's are truly scrumptious. They are light, yet filling. And each chutney you get is so tasty and flavorful. Try it this weekend with your kids!

P.S. Also naturally gluten-free!

Celebrate the holiday of Purim with your kids! It's a festive Jewish holiday that involves good stories, masquerading in costumes, and yummy food. In honor of Purim triangular pastries called Hamantaschen ("Haman's pockets filled with lots") are served. This is because Haman is the villan in the story of Esther. A sweet cookie dough is rolled out, cut into circles, and traditionally filled with poppy or prune filling, then wrapped up into a triangular shape with the filling showing. Here is a simple recipe that you can try with your kids at home this Sunday, March 20th...

Ingredients
4 Eggs
1 Cup Sugar
1/2 Cup Oil
1/2 Lemon (zest and juice)
1 Tsp. Vanilla
5 Cups Sifted Flour
2 Tsp. Baking Powder
1 Egg to Brush
Jelly for Filling (Raspberry or Apricot)

Steps
1. Preheat oven to 350(deg). Beat eggs and sugar. Add oil, lemon, vanilla, flour, and baking powder.

2. Divide the dough in 4 parts and stretch it on a floured surface about (1/2) cm thick. Cut out circles with a cup.

3. Put a half a teaspoon of jelly in the middle of each circle. Lift the right and left sides of the circle and put them together in the middle on top of the jelly forming a triangle. Then lift third side toward the center and press it together with the other two.

Put them on a greased cookie sheet, brush with beaten egg and bake for 20 minutes. Enjoy! And don't forget your graggers!!

We can all use a little spice this winter to warm us up. Recent studies have shown that cinnamon boosts cognitive function and memory. Located on Columbus Avenue on the Upper West Side, Bomboloni will certainly put a smile on your face and satisfy your sweet tooth. Forget Magnolias! These Italian gourmet doughnuts are like heaven in your mouth. Everyone can find something with such a variety of flavors: from raspberry to toasted chocolate marshmallow and peanut butter cup. The staff is super friendly and the prices are reasonable at $1.50 per doughnut. They're light and fluffy, plus not too sweet and overloaded with sugar. Just a good proportion of goodness! This is a cute little place that you should definitely check out with your kids.

Play With Your Food

Here’s an idea for some hands on fun to do with your children on the next stuck-at-home snow day. Dessert sushi is exciting because it looks like real sushi, but without the raw fish concerns. Making these mini masterpieces is a good way to spend some quality time with your kids, while encouraging creativity and kitchen skills.

For the base rice, use a recipe of rice crispy treats.

For the toppings and fillings:

Swedish fish

Dried fruit, such as papaya (for tuna), apricots (for salmon)

Green Fruit by the Foot, or fruit rolls (for seaweed wrap)

Tiny red jujubis or jelly beans (for roe)

And your imagination!

Once you set up the ingredients in bowls, the fun can begin. Roll out the rice crispy treats while its still warm to cut into small rectangles or circles to put the toppings on. Create different rolls, nigiri, or sushi using the candy pieces, and wrap with the fruit rolls for the effect of seaweed. Arrange on a plate with a bit of green frosting for wasabi and pieces of candied ginger for a real looking presentation!

Restaurant Week for Kids

NYC Restaurant Week has just begun and is an excellent way to try out some of New York’s finest restaurants at a fraction of the cost. From now until February 6th enjoy $24.07 lunches and $35 dinners at many of the participating dining establishments around the city. This would also be a good time to take your children out to experience some of the interesting cuisines and atmospheres of the different kinds of restaurants. To check the kid friendliness of a place before going, visit minimunchers.com for its 5-crayon rating for restaurants exclusively with children’s menus. For some other ideas for restaurants to take your kids to, check out:

The Moxie Spot in Brooklyn has an extensive menu, perfect for introducing your little ones to new dishes such as Peking duck rolls, fried tofu, and edamame, but also have many classic favorites such as mac n cheese and chicken fingers for the picky ones. On some days, they also have story time and sing-alongs.

Benihana offers a whole new meaning to playing with your food. At this Japanese restaurant, you get food and a show, so your little ones can be entertained while waiting for their food to be prepared. They offer meat, seafood and vegetarian options.

Artie’s Delicatessen is the classic New York to get deli treats practically made for kids: grilled cheese, hot dogs, fries, chicken fingers and sprinkle cookies.

Alice’s Tea Cup is a Wonderland themed restaurant with freshly brewed teas and teatime snacks that make breakfast, brunch and lunch magical for your little girl.

Winter storms have just begun, and we are already running out of things to do with the snow. Snowmen, snowballs, and snow angels can be fun for a while, but they are certainly not as delicious as snow ice cream!
The blankets of shiny white snow after a storm can be enticing to eat, and with this simple and fun recipe, you can turn the snowfall into a treat.
When collecting snow clean enough for consumption, make sure you use your best judgment, or place a clean bowl or bucket outside to catch the flakes as they fall.

1.	Into the large bowl of snow, stir in 1 cup sugar and 1 tablespoon of vanilla extract.

2.	Add milk until you get to a desired consistency, about 2 cups of milk per gallon of snow.

3.	Eat and enjoy!

For more winter treats, join us in class this Saturday as we make Hot Chocolate and Biscotti Cookies from scratch!

This festive recipe is perfect for the holidays, taking a spicy twist on traditional play dough.

Gingerbread Play Dough
1 cup flour
1/2 cup salt
2 tsp cream of tartar
1 cup water
1 tsp vegetable oil
Spices: cinnamon, allspice, ginger, nutmeg
Green and red food coloring to make brown, optional, because the spices usually give the dough a good brown color.

1. Mix the dry ingredients. Experiment with the spices until you get the scent and color you like.
2. Mix water and oil together first, then stir them into dry ingredients.
3. Cook the mixture in a pot for 3-5 minutes on low heat, constantly stirring until dough sticks together in a large ball.
4. Knead the dough until it becomes soft and smooth.
5. After the dough cools, store in an airtight container to keep it soft, or shape it and leave it to dry.

For more fun (of the edible kind), come join us for our parent/child gingerbread house decorating class this December and let your creative imagination run wild.

Let The Games Begin!

Make new traditions this Thanksgiving of the non-food kind by playing festive games with your family. It will create fun memories while encouraging physical activity!

Popcorn Relay Race
This game is messy, but fun for adults and children to play together. Put bowls of popcorn on one side of the room, and empty bowls on the other side. Set up a team of two to take popcorn from one bowl with two spoons. Work together like tongs or carry the spoons separately, but make sure to empty your bowl first!
(Note: popcorn is a choking hazard for children under 3)

Turkey Hunt
Start by having the children draw turkeys on a dozen or so index cards. To play, everyone leaves the room, except for the leader who hides them around the room. The hunters return to start searching for the turkeys, bringing them back to the leader to put in a separate pile for each hunter. The one who finds the most turkeys wins and becomes leader for the next round.

Pumpkin Race
A simple race of rolling a pumpkin on its side, but since pumpkins aren't smooth, they'll refuse to roll in a straight line! Get two large pumpkins and two sturdy sticks. Start on one end of the room, making sure there is plenty of space, and start pushing the pumpkin with the stick towards the finish line. Young players can use their hands. You can also turn this game into a relay by playing in teams.

Where is Mr. Turkey?
This is the "Hot...Cold" finding game turned silly. One player is the farmer, and the others are turkeys. The farmer leaves the room, and the turkeys hide a small toy turkey. When the farmer returns, the turkeys give clues to where it is by gobbling, quietly if the farmer isn't near it, and louder as he gets closer until the turkey is found. Don't forget your video camera!

Green in the Kitchen

The kitchen tends to produce the most waste of any other room in the house. Between packaging, energy use and organic waste, many homes end up unknowingly spending a lot more on what ultimately ends up being garbage.

1. Bring your own reusable bags to the supermarket. some markets like Target, CVS and Whole Foods even give you a discount for this green gesture.
2. Avoid oversized portions. while it may seem cheaper to by in bulk, you really only lose money if you have to throw away spoiled, unused food.
3. Buy lasting cookware and utensils. choosing sturdy utensils instead of cheap ones will decrease the need to constantly replace rotten wooden spoons or melted plastic spatulas.
4.
With the start of dark gloomy mornings upon us, your bed might seem more tempting than facing the not-so-light of day. Use these tips to put a little pep in your step as you get ready in the morning.

•	Water works. In the first 15 minutes upon waking, hydrate your dry cells with a fresh glass of water. This will flush out toxins, help clear your system and bring up your metabolic rate.

•	Solar powered recharge. Draw your curtains and let the natural sunlight stimulate your brain cells awake.

•	Follow your nose. Jasmine infused scents increases your brains beta waves, which make you more awake and alert. Citrus smells have also been shown to be energizing.

•	Burst of color. A yellow bathrobe, red coffee mug or an orange umbrella might be enough to excite your eyes. These bold colors have the ability to give you a bit of liveliness, as opposed to the calming effects of blues, greens and purples.

•	Fuel your day. Eat a protein rich breakfast will keep your blood sugar levels consistent, so you don’t face an early morning crash. Eggs on a whole grain muffin, peanut butter on whole wheat toast, or cottage cheese with berries and a bagel can keep you feeling full and energized until lunch time.

Basil 911

Basil, a wonderfully aromatic, deliciously useful culinary addition is a great plant to have in your kitchen. Basil oil has been studied to have antioxidants, anti-cancer, antiviral and anti-microbial properties. And best of all since all it needs is a bright windowsill, many people love to grow this herb right in their own homes.

But what happens when your beloved basil starts to look a little less than sprightly? Though your plant might look dead, as long as there is even a small amount of green left, all it might need is some TLC.

1. Check the leaves. If there are small bites, it might be a pest problem. Spray them with a mixture of soapy water with a teaspoon of jalapeno pepper juice to keep those little buggers away.

2. Check to be sure that your plant is not root bound. Hold the plant near the roots, flip it over and slide the plant until you can see the root system. If they are closely intertwined, you should replant it in a larger pot, with fresh soil and organic fertilizer to give it some space.

3. Remove any brown or discolored leaves. If necessary, cut your plant down to 1/2 inch from the soil. Water well with a compost tea made of crushed egg shells, coffee grounds, and tea leaves. Put your pot in a bright sunny spot and watch it flourish!

Once your basil plant is back in good health, be sure to trim you basil plant regularly from the top to keep it growing strong and full! Use the trimming to season your favorite dish.

Long LIve Jack!

Pumpkin carving is a timeless activity of Halloween, but once made, the Jack o' Lantern itself doesn't have as long of a life span. Here are 4 easy tips for creating the perfect pumpkin, and extending its life so it doesn't become a ghost by Halloween night.

1. Start with a large pumpkin without bruises or moldy stems to prevent faster spoiling. Lighter colored pumpkins tend to be softer and easier to carve.

2. Clean and dry your pumpkin. Cut out the stem at a 45 degree angle so the lid will have a place to rest on, rather than falling through.

3. Take out the insides using a metal spoon or ice cream scoop, aiming for 1 inch thickness of the shell. Also, the smoother you make the back wall, the better the candle light will reflect.

4. Once you have carved out your creation, help it live long and prosper by immersing it in a solution of 1 teaspoon bleach and 1 gallon water. This will help the pumpkin stay hydrated and sterilize it to delay shrinking and molding. After drying it off, rub the inside and the cut out surfaces with Vaseline to seal in the moisture. Repeat these steps whenever you feel your pumpkin is drying out.

One more thing: save those seeds! Pumpkin seeds are an excellent source of vitamins and minerals and are easy to prepare. rinse them well removing all pulp, then leave overnight to dry. Place on a baking sheet and toss to coat with butter, oil or cooking spray. Sprinkle with salt, garlic powder, seasoned salt, cayenne pepper, or your favorite seasoning and bake in the oven for an hour, tossing every 15-20 minutes. Once they are cool, enjoy!

Something new is brewing in our kitchen, something fresh and wonderful, yet still encompassing all that we know and love -- we've changed our name to Taste Buds! Formerly known as Cupcake Kids, Taste Buds maintains its mission and passion for culinary adventures for kids and families ages 2-teen. New York’s premier provider of kids cooking classes and parties, now has a name worthy of covering all the excitement that takes part in our kitchen, from cooking classes for kids, to baby food making for adults and everything in between.

Since its inception in 2007, Taste Buds started off as a few holiday baking classes, and cupcake making birthday parties, and began to evolve into a wide variety of cooking classes using many foods and cuisines. In addition to classes for kids, courses now include kitchen organization and baby food making for adults and also after school programs. There are also opportunities for urban food outings at famous eateries like Shake Shack, and specialty classes such as the October 9th cupcake class with Iron Chef America Pichet Ong.

Under its new name, Taste Buds opens the kitchen door wider for its chefs and continues to grow with them as they develop their skills and passion for culinary adventures.

The places to eat in New York City are endless, and new restaurants and countless cuisines are popping up all over the place everyday. But throw a couple kids in the mix and you might feel that your options get a bit limited.

Thankfully, Carla Sullivan, mother of one of our young chefs, is a 10 year experienced NYC diner with 4 years experience dining with children, and has taken all the guess work out of what to expect when bringing your young ones out for a night on the town.

Minimunchers.com finds kid-friendly establishments to insure your meal goes as smoothly as possible. Only restaurants that actually have a seperate kids menu, or are dedicated childrens restaurants are reviewed on the site, and the review is based on the important stuff like stroller friendly entrances, location of the bathroom, and waiting time, not what the chicken nuggets taste like. Each restaurant is rated on child friendliness, convenience and entertainment, using a crayon point system. If a restaurant fails to have any of the 9 criterions, it gets a piece of broccoli.

Now you can have your dinner and eat it too, with the peace of mind that your kids are enjoying it as much as you are. Don't forget to say Thank you Carla!

Reducing Food Waste

One of our favorite parts of summer is getting to cook with all the fresh fruits and vegetables from our local farmers market. But have you ever found yourself a few days after a shopping trip staring at all your delicious produce as it dawns on you that you will never, ever be able to eat it all before it goes bad? We've all been there, even the most environmentally conscious (after all, that's why we rode our bike to buy the local fare!), and food waste is a big problem these days. Here are some helpful tips we use that will change the way you shop and store your produce.

1. Always make a shopping list with your weeks meals planned out in advance, sticking to a list helps prevent impulsive buys at the grocery store.

2. Use your supermarket salad bar. Instead of buying an entire head of celery and using only 3 stalks leaving the rest to go bad in your refrigerator use the salad bar's pre-chopped vegetables.

3. Keep track of expiration dates and inventory of you're pantry, this can prevent re-buying of items while also keeping you alert to what produce is nearing spoilage.

4. Use your freezer wisely. Fruit that is about to go bad can be frozen to make a smoothie out of. Portion out tomato sauce and freeze in batches.

5. Schedule a "leftovers night" into your weekly dinners. This can also be fun and creative to use only whats in the back of the refrigerator and challenge yourself. Some great dishes for this are quiches, stir-fries, and stews.

One of our favorite ways to eat basil in the summer is in a fruit salad. Adding basil to warm dishes releases the herb's flavor and scent, but be careful because it blackens fast.

Strawberry Basil Salad
1 Qt Strawberries
2 Tbsp Confectioners Sugar
5 Basil leaves
2 Tbsp Balsamic Vinegar

We like using strawberries but you can use any fruit. Cut the strawberries into quarters and toss with balsamic vinegar, sugar and a handful of torn basil and you have a refreshing summer salad!

Fun Fact: Basil is part of the mint family and goes great as a substitute in recipes that call for fresh mint leaves.

We have been seeing coconut water everywhere these days, and had to find out what the fuss was all about! Turns out that coconut water is not only delicious, but also really healthy for you too. Coconut water is the liquid that comes from young coconuts. When a coconut matures this liquid is replaced by coconut meat and air. The coconut water is sweet and refreshing and a great way to hydrate yourself in the summer. In South America, coconut water is packaged and marketed as a sports drink because it is high in potassium and mineral content. In fact, one cup of coconut water contains more electrolytes than sports drinks (like Gatorade) and more potassium than a banana. Coconut water is also a great way to boost your immune system, it helps detoxify and fight viruses and best of all, it's all natural.

Getting "Energy Ready" For Summer

Now that hot weather is hear to stay, here are our Top 10 Kitchen Tips for saving energy and money.

1. Fix leaky faucets- 1 drop per second can add up to 165 gallons a month.
2. Use the microwave when possible- it cooks faster and doesn't create as much heat as the stove.
3. Keep a lid on it! Covered pots retain heat and cook food more quickly.
4. Take advantage of residual heat. Turn off the oven or stove several minutes before the recipe indicates- both will stay hot enough to complete the cooking process.
5. Most of us eat a lot of pasta. Next time make extra, toss with olive oil, and keep in the fridge so you don't have to boil water next time.
6. Be sure your refrigerator seals shut. If you can pull a piece of paper out while the door is closed, your seal needs to be replaced.
7. Keep your freezer full. The fuller the freezer, the less the cold air escapes when the door opens.
8. Only run the dish and clothes washer when full. They use the same amount of water whether full or empty.
9. Air-dry dishes instead of using the dishwasher's heat drying option and hang your clothes on a line instead of using the dryer.
10. Unplug any electronics that aren't being used.

Bonus Tip: For a fun way to get your kids involved, make Iced Sun Tea (decaf of course!) on your sunny window sill instead of using a kettle. The kids will love it and it's a great way to start teaching them about saving energy. For a sweeter variety, mix in some lemonade to make an Arnold Palmer.

It's Corn Season!

When it's sunny and hot outside all we crave is a fresh ear of corn, so sweet and refreshing! Did you know corn, also known as maize, is actually a grass? There are hundreds of varieties of corn and all of them are Indian corn. The number of kernels per ear varies from 500 to 1,200, but a typical ear has around 800 kernels. Corn is planted when the soil is warm enough to germinate the seeds but not so early that the young plants care likely to be damaged by frost. It's peak harvest season is the warm summer months so be sure to head over the your local farmer's market or fruit stand to pick up some local corn soon. If you're anything like me and hate getting little pieces of corn stuck between your teeth, here's a helpful tip! Cut the fresh corn off the cob making sure not to waste any of the liquid that oozes out. This liquid is known as milk and has tons of flavor, and is fantastic when mixed with fresh corn cut from the cob and a little salt, pepper and a touch of butter.

Fun Fact- Corn is eaten in many different ways and in all kinds of shapes, textures, and colors. Corn is an ingredient in more than 3,000 grocery products and many of these are items that may surprise you such as cereal and peanut butter. Corn is also prevalent in all stages of the food cycle - your bacon and egg breakfast, glass of milk at lunch, and hamburger for for dinner are all produced with U.S. corn.

Watermelon: a fruit or a vegetable?

Drum roll please...BOTH! Watermelon is a fruit and a vegetable. It is a fruit because it grows from a seed, it has a sweet flavor and refreshing qualities. It is a vegetable because it is harvested and cleared from the field like other vegetables and because it is a member of the same family as the cucumbers, pumpkin and squash. In fact, in 2007 watermelon became Oklahoma's official state vegetable. Either way you think about it, watermelon is very healthy for you. This veggie disguised as a fruit is rich in Vitamin C, which is important for wound healing, healthy gums and teeth. Also high in Vitamin A, this veggie-fruit will help your body make cells that fight infections.

Did you know that watermelon is 90% water? Besides its health benefits the watermelon is also a thirst quenching food and completely delicious. Try this fun recipe for ice pops at home!

Watermelon Ice Pops
Watermelon
Chunks of fresh fruit
try grapes, strawberries, blueberries or anything you have in the refrigerator

Puree the watermelon in a blender or food processor and pour it into Popsicle molds. For an even easier recipe, free the watermelon puree in ice cube trays and add it to your favorite beverage of choice for a sweet treat.

Organic Baby Food

It's no mystery that home-made baby food is fresher, better tasting, cheaper and less wasteful than ready-made commercial baby food, but for those of you out there still wondering "what’s so bad about the jarred stuff, anyway?", here’s a few more reasons to dust off that food processor in your kitchen cabinet and get steaming, boiling and pureeing!

In order to make jarred baby food shelf-stable (it's designed to last for two years past the date of purchase), manufacturers heat the puree to extremely high temperatures and then cool it, eliminating a lot of the nutrients and much of the flavor in the original food. Many brands also add thickeners and stabilizers. It’s certainly not poison, but if it’s all your baby is eating, it’s training him/her to prefer bland, empty calories. Have you tasted a jar of "beef, carrots and corn country dinner" lately? Not exactly an explosion of flavor in your mouth.

Children are also much less likely to become fussy eaters if they are exposed to a good selection of fresh foods, tastes and textures from an early age. More often than not, the picky eaters tend to be the ones brought up on jars of bland commercial purees, and babies given fresh foods from the beginning easily make the transition to joining in with family meals.

There's a health crisis plaguing America’s children today – childhood obesity, diabetes, the list goes on and on – and food is by far the main contributing factor. Do your children a favor and, from the start, let them recognize a variety of simply prepared whole foods, foods as close to their natural state as possible, as the familiar tastes that trigger "home" in their minds and bodies. Feed them what you eat, and make what you eat good enough to feed your baby!

Making baby food is as simple as 1, 2, 3. Join us at one of our upcoming Organic Baby Food 101 classes to help you on your journey to fresh, delicious, home-made baby food or check out one of our favorite books- Superfoods: For Babies and Children & Top 100 Baby Purees by Annabel Karmel; Super Baby Food by Ruth Yaron; and Feeding the Whole Family by Cynthia Lair.

Basil

Basil is an all time fav in the herb category here at Cupcake Kids and we are constantly adding it to our pizzas and pasta dishes. We we’re so tired of getting it at the store all the time, we decided to get a whole basil plant for our sun drenched windowsill in our new kitchen studio. The newest addition to our kitchen hails from the Union Square Greenmarket, the best place around to buy fresh herbs, produce, dairy products, and almost anything else you could think of and we can't get enough of it!

Why is basil so great, you ask? Well for one, it tastes delicious! The basil we eat here in the United States is called sweet basil. It's in the mint family and has a strong, somewhat sweet smell and taste, which is due in part to the flavonoids and oils within. These same essential oils that make each leaf taste so great also offer us some serious health benefits. Studies have confirmed that these oils have antioxidant, anti-cancer, antimicrobial and anti-viral properties! So many benefits packed into such a tiny plant! Next time you want to boost flavor and health in a dish for you and your little ones, try a sprig of basil

Bananas

What's the perfect snack for both you and your little ones? It's the vitamin- and mineral-rich super-fruit... the banana!

You probably already know that bananas are rich in natural carbohydrates, which provide a great (and healthy) boost of energy after playtime or as a snack any time of day. Or, you may have also known that bananas contain potassium, which helps to fight muscle cramps and improves nerve function.

But what you may not have know is that bananas also contain vitamins and minerals that boost immunity, help build strong bones, and improve mood! They also help with your child's digestion, and are non-allergenic, so they're the perfect solid food to introduce to your infant

But maybe the best part about bananas... they're convenient! They come in their own natural wrapping and can easily be tossed into a lunch bag, backpack, or stroller bag. So next time you're looking for a good, healthy snack for your child, choose the naturally sweet and delicious banana!

Trivia: Bananas are grown all year round in all different parts of the world, from Southeast Asia to Arizona, so, unlike other fruits, they're always in-season!

Green Bakeware

Did you know that kitchen appliances make up nearly 27 percent of energy used by households across the country? That#146;s more than lighting, home electronics, and laundry appliances combined!

A great (and simple) method of reducing your carbon footprint is to replace metal oven pans with glass and ceramic cookware. Because of their highly efficient forms of insulation, using glass or ceramic cookware in the oven allows you to cook meals at 25 degrees lower in the same amount of time as using their metal counterparts. Glass and ceramics are also long lasting and won#146;t rust! Most importantly, though, they#146;ll save you money on electricity, while also helping the environment!

Now is the perfect time to take advantage of late-season produce. Summer staples like snap peas, tomatoes, and peppers can be found on the cheap at your local farmer's market well into the fall. Take advantage of their bargain-basement prices by adding some corn to a creamy chowder, jazzing up an apple crisp with peaches or plums, and roasting some delicious stuffed peppers.
What's Thanksgiving without a generous helping of cranberry sauce? We dare you to dream beyond the can this year, and give the homemade stuff a shot. Surprisingly easy and quick as this recipe is, we suspect that we might be starting a Thanksgiving trend! Don't be afraid to jazz things up by adding some ginger, apples, pears, raspberries or other fruit into the mix, or even replace the water in the recipe with orange juice or apple cider for a kick of flavor.

Basic Cranberry Sauce
3/4 C water
1 C granulated sugar
1/2 t salt
1 (12 ounce) bag of cranberries

Bring water, sugar, and salt to boil in medium saucepan over medium heat. Add cranberries and simmer until slightly thickened and two-thirds of berries have burst, about 5 minutes. Transfer to serving bowl and cool completely, at least 1 hour. Serve. Although your little one may not know much about the life of this historical icon, he or she can still participate in the spirit of service that Dr. King's memory evokes. Invite your little one to honor Dr. King by donating to your local food pantry (check out the Food Bank Locator to find one near you). Not only can you and your budding chef participate in this great day of service, but you can also discuss the nutritional content that makes certain foods most valuable to food pantries.

1) Proteins: Canned tuna, meats, and even peanut butter serve as great sources of protein for those in need.

2) Rice and Pasta: These staple foods not only fill the stomach but provide complex carbohydrates. As a newly married domestic diva, Kate easily plays the role of mother hen among the CK Crew being sure that we're all healthy and happy. When she's not heating up the kitchen or jet-setting off to the latest exotic locale with her beau, Kate loves to spend time with her dog Penelope and go to the gym!

The New York Botanical Garden is currently offering a special kids program called Gingerbread Adventures that will answer all your little one's questions about this holiday staple.

Gingerbread Adventures offers your child a hands-on learning experience where he or she can smell, touch, and taste the spices and other plant parts that make up a classic gingerbread recipe. With his field notebook in hand, your child will learn about all of the special ingredients for gingerbread and match them up with the names in his pamphlet. A good time in guaranteed for all, and there's still time to get in on the fun. Over the next few weeks, you and your child can experience this fun, behind-the-scenes look at gingerbread in the Everett Children's Adventure Garden starting at 1:30 p.m. everyday and at 10:00 a.m on December 21, 24, 28-31 and January 1 and 4.

Be sure to also check out the illuminated winter wonderland of the Holiday Train Show in the Conservatory as you step into a freeze-frame of the perfect holiday season in New York - twinkling lights surrounding replicas of historic landmarks and model trains speeding along more than a quarter mile of track.
Happy Hanukkah

It's time for the yearly Festival of Lights, and Cupcake Kids is ready to celebrate with yummy gelt, latkes, doughnuts, rugelach and dreidel games!

Every holiday has keystone traditions that help to make the celebration extra special, and Hanukkah is no exception. The traditional foods celebrate the miracle that Hanukkah commemorates by heavily incorporating oil into their ingredients or preparation. Latkes, doughnuts and other fried foods pay tribute to the purified oil that burned in the menorah at Jerusalem's Temple for eight days when it should have lasted for only one.

This year, take your Hanukkah traditions to the next culinary level by experimenting with your recipes. Keep your latkes crispy by draining them on a drying rack instead of paper towels and top them with applesauce brightened by the unusual addition of cranberries. Also try using sweet potatoes as opposed to the favored Yukon Gold potatoes for a sweet twist on an old favorite. Happy Hanukkah to everyone, and enjoy a great meal!

It's Time For Gingerbread

Whether they're crispy gingersnaps, soft cookies, spiced cake or fantastically decorated houses, Gingerbread is a staple of the holiday season. This treat made with molasses and flavored with ginger, dates back centuries although it didn't officially get it's name until the 15th Century. Quickly a favorite in Europe, Queen Elizabeth I honored guests in court with a gingerbread portrait decorated with cloves dipped in gold. Over the past century, Gingerbread has been further popularized with stories such as Hansel and Gretel and The Gingerbread Man making it the treasured Holiday tradition that it is day.

At CK, we love this time of year as we get to help hundreds of kids and their parents decorate their very own Gingerbread House Masterpieces! Join us at one of our upcoming classes or invite us to your corporate holiday event, birthday or play date to decorate a house of your very own. If you can't make it this year, don't be intimidated by gingerbread. Check out this easy recipe for gingerbread cookies. Your kids will remember rolling and decorating them for years to come.

Gingerbread Cookies

3 C all-purpose flour
3/4 t ground cinnamon
3/4 t ground ginger
1/2 t allspice
1 t baking soda
1/2 t salt
1/4 t fresh black pepper
1/2 C butter
1/4 C vegetable shortening
1/2 C light brown sugar
2/3 C molasses
1 egg

Sift the flour, spices and baking soda in a medium bowl. In a separate bowl, mix together the butter and shortening with an electric mixer. Add the sugar, molasses and egg and mix until well combined. Gradually mix in the flour mixture by hand to make a stiff dough. Form the dough into two disc shapes and wrap in plastic wrap. Refrigerate until chilled. Roll out the dough on a lightly floured surface to a thickness of 1/8 inch (slightly thicker for softer cookies). Using floured cookie cutters, cut the dough into a variety of shapes and sizes. Decorate the cookies with raisins, currants or white chocolate chips to make eyes, a nose, a mouth and/or buttons before baking (optional). Place the cookies on a baking sheet, about 1 inch apart, and bake until firm, about 8 to 10 minutes. Allow cookies to cool for 1 minute on the baking sheet and then transfer to a wire rack to cool. Decorate and enjoy! Makes 1 dozen large cookies.

Although you may just think of your turkey as the centerpiece to your holiday meal, it turns out the turkey is a much cooler bird than you probably know.

Besides being renowned for its keen intelligence and sharp vision when avoiding hunters, the turkey was also the favored bird of founding father Benjamin Franklin. He even wanted it to be our national mascot. The wit and cunning turkeys possess are matched only by their superhero strengths, which including the ability to glide for one mile without flapping their wings and the ability to run 18 miles per hour.

The average American eats 15 pound of turkey a year, and nearly a third of that is over the holidays. In the spirit of the Thanksgiving holiday, the president takes pity on one turkey every year by granting it a Presidential pardon. That's one lucky bird!

Cookies for Kids' Cancer is a non-profit organization that raises money for pediatric cancer research with their amazing bake-a-thons. When founder Gretchen Holt's son, Liam, was diagnosed with a rare form of pediatric cancer, she put her baking skills and her community to work with a bake sale that ultimately raised $400,000 for cancer research. Since then, Cookies for Kids' Cancer has become a full-fledged non-profit that has garnered the support of major organizations like Glad, Philosophy, and GoodSearch.com.

On Friday, November 6 from 7am-midnight, Cookies for Kids' Cancer will be extending the success of their first major bake-a-thon by baking up a storm at the Institute of Culinary Education. We'll be helping them meet their goal of baking 30,000 cookies in one day by joining in the fun from 8am-10am. Come and support this great charity with us!
Even the most ordinary of dishes can turn extraordinary with the addition of a few herbs or spices. Add a sprinkle of nutmeg to just about anything and you've got yourself a gourmet meal! So how can you get the most from the spices and herbs you've got stored in the pantry? To keep herbs and spices fresh, store them in airtight containers in a cool, dark place. Dried herbs and ground spices will keep for up to 6 months, and whole spices will last for up to 2 years. To release more flavor from dried herbs, crumble them between your fingers before adding them to a dish; toast spices in a dry skillet until fragrant (15-30 seconds) to bring out more flavor.

Trivia: Terrified of garlic breath? Chew on some parsley after eating garlic to neutralize odors and freshen your breath!

Current CK Fave: Parmesan-Herb Popcorn
For a yummy, quick, and easy after-school snack, whip up some Parmesan-Herb Popcorn. Start by following the instructions on a plain bag of microwavable popcorn. Once the popcorn is popped, add 1/4 cup of parmesan cheese, a teaspoon of rosemary, a teaspoon of thyme and 1/2 teaspoon of pepper. Give it all a good shake right in the bag, then serve!
Organic, local, or neither? Oh my!

With so many places to buy fruits & veggies, it's hard to know what's best. Should you shop at the grocery store, the farmer's market or your local street vendor? We decided to do some digging and we think you'll be surprise by what we found. Your standard grocery store shelf produce has the same nutritional value as most organic and local food but they may contain more pesticides and heavy metals. What about those street vendors with their colorful display of produce and signs showing insanely low prices? These fruits & veggies are best for same day consumption--the prices are enticing, but you don't want to let these sit in the fruit bowl too long. Onto the farmer's markets where you'll find produce grown locally and often organically (produced without pesticides, fertilizers, growth hormones, and additives).

So where do we shop? Everywhere! If we're walking down the street on a hot day, street vendor it is. Saturday morning? Meet you at the Union Square green market! For everyday staples, we'll head to the grocery store around the corner. However, there are a few fruits and veggies that you'll get your money's worth when purchasing organic: apples, peppers, carrots, lettuce, and strawberries are among the foods that are grown with the most pesticides, so spring for the organic label if you can. Whatever you decide to buy, don't forget to wash all produce before serving!

Trivia: did you know that the typical carrot has to travel 1,838 miles before it reaches your dinner table? That's over half of the distance of the US. In addition to how produce has been grown, it's important to also consider how far it's had to travel to get to us.

Have you ever mistaken a zucchini for a cucumber? Mistake no more! Zucchini is a green summer squash whereas a cucumber is in the gourd family. To tell the difference between cucumbers and zucchini use your sense of touch; cukes are cold and waxy while zucchinis are prickly and dry. Zucchini is very healthy because it's low in calories and high in fiber and Vitamin A. It is delicious served raw with dip, cooked as a side, and as a substitute for butter or oil in baked goods. Because Zucchini is easy to grow, especially during the summer months, it has a reputation for producing an overwhelming crop for home gardeners! CK has a way for you to make use of this abundant, healthy, and tasty veggie that will keep you eating it well into the fall months.

Zucchini Boats
1 zucchini, ends cut off and sliced in half
Olive oil
1 cup ricotta cheese
1 egg yolk
2 T bread crumbs
1/2 of an onion, diced
1/2 t garlic, minced
1 tomato, diced
Shredded Parmesan cheese (optional)

Cut zucchini in half and scoop out the seeds with a melon baller or spoon. Sprinkle both halves with olive oil, salt & pepper. Place on a baking sheet in an oven preheated to 350 degrees F. Bake until zucchini is soft, about 15 minutes. Mix together ricotta, egg yolk, and bread crumbs; set aside. Sautee onions over medium heat with oil until translucent and then add garlic and tomatoes. Sautee for a few more minutes until tomatoes are soft. Next, mix this in with the ricotta cheese mixture and add in a bit of Parmesan cheese and salt and pepper. Spoon the mixture into the zucchini boats and sprinkle with Parmesan and drizzle with olive oil. Broil in the oven until ricotta mixture cooks up and cheese is lightly browned, about 10 minutes.
